A Champagne House is eventually judged on the quality of its Brut Non Vintage. It is in the making of such a wine that the true Art of Champagne blending reveals itself. This is an art in which the House of Veuve Clicquot excels. Our Brut Yellow Label reflects the superb vineyards we own and the consistent nature of our House style. The predominance of Pinot Noir provides the structure that is so typically Clicquot, while a touch of Pinot Meunier rounds out the blend. Chardonnay adds the elegance and finesse essential in a perfectly balanced wine. Grapes from as many as 50 to 60 different Crus go to the blending of Yellow Label. Traditionally, the proportion of each grape variety used is : 50 to 55% Pinot Noir - 15 to 20% Pinot Meunier - 28 to 33% Chardonnay. These figures vary slightly from year to year according to conditions. The Chef de Caves has to achieve the total consistency of taste, which makes Yellow Label so immediately recognisable, so utterly reliable both in terms of quality, colour and bouquet. He will draw on priceless Reserve wines for the blend: from 25 to 35%, sometimes as much as 40% to ensure the continuity of the House style. Each of these older wines - perhaps 9 years old - is kept separately to preserve the unique qualities of the vineyard and the vintage. First, Yellow Label looks beautiful: golden-yellow, with a foaming necklace of tiny bubbles. Next it is so pleasing to the nose: initially reminiscent of white fruits and raisins, then of vanilla and later of brioche. Note the fine balance between the fruity aromas coming from the grape varieties and the toasty aromas following the ageing in the bottle. The first sip delivers all the freshness and forcefulness so typical of Yellow Label with a symphony of fruit tastes following on. Here is a true member of the powerful Brut family, well structured, admirably vinous. The lingering aromas echo and re-echo, with each fruit or spice note distinct. Veuve Clicquot Yellow Label manages to reconcile two opposing factors - forcefulness and finesse - and to hold them in perfect balance. This consistent power to please makes it ideal as an aperitif, and perfect as the Champagne to enjoy with a meal.

DISTILLERIES PROVENCE - RinQuinQuin a la Peche 75cl Bottle
The term RinQuinQuin was originally a generic word. In the Provencal language it means invigorating drink (from the verb requinquilhar : to cheer up). People used to give names to their favourite aperitifs or digestifs. Today, it is becoming synonymous with 'peach wine'. This aperitif has a base made of white wine, alcohol, infusions of peaches, peach tree leaves and sugar. Peach trees : originally found in Persia, peach trees came to Provence during the Roman era. Long ago, in Provence, peach trees were often seen as having therapeutic properties, something that has been totally forgotten today. The leaves, blossoms, stones and gum from peach trees were used as medicine. The fruit is harvested when ripe. They select several varieties of peaches, including the following three : - Cardinal peaches, with their orange-red skin and pale yellow, juicy meat. - Coronet peaches are white, juicy and flavourful. - Junegold peaches have orange-yellow skin and light yellow and tasty meat. The leaves are harvested from the peach trees sometime in September. The peaches and leaves are macerated separately in alcohol and wine in order to extract the parts that are soluble. At the end of the required maceration period (six months to one year), the infusions that are obtained are separated into two parts. The liquid part is added to the white wine. The solid part is distilled and then added. RinQuinQuin aperitif should be enjoyed straight up, chilled, and with ice cubes if you prefer. RinQuinQuin goes well with foie gras. It may also be used to flavour fruit salads (1 tablespoon; berries are suggested).

OUZO 12 70cl Bottle
First produced in 1880 by the Kaloyannis brothers in Constantinople, the increasingly successful business moved to the Athenian port of Piraeus in 1919. The brothers produced various styles of ouzo, but the one preferred by connoisseurs came from barrel number 12. So, as the legend goes, No. 12 Ouzo was born. It became the best-known, top-selling ouzo brand in Greece and eventually the biggest and most famous ouzo around the world. Over the years Ouzo 12 has remained true to it's original recipe. The spirit's characteristic taste comes from carefully selected herbs and spices - aniseed, star anise, fennel, nutmeg, coriander, cinnamon and cardamom. These are distilled in traditional copper pot stills and the resulting liquid is placed in barrels to marry the complex flavours until they attain the full, distinctive taste for which Ouzo 12 is famous. Ouzo 12 is best drunk either neat, on the rocks, or mixed long with water, lemonade or soda.

CLOUDY BAY - Pelorus NV 75cl Bottle
The pale straw colour and aromas of ripe citrus fruits indicate the chardonnay origins of Pelorus nv. A bouquet of apple and lemon complements fresh bready notes derived from two years bottle ageing on lees. The deliciously crisp palate displays toasty, creamy complexity, enhanced by a lingering nutty finish. Chardonnay and pinot noir grapes are sourced from several grower and estate vineyards located within the Wairau Valley in Marlborough. Soils vary from stony free draining gravels to fine silt loams containing some clay. Vineyards are planted at a density of 1850 vines/ha and in an average year yield 9 tonnes/ha. The vines are trained to a standard vertical shoot positioned canopy. As a non-vintage sparkling wine, the final Pelorus blend comprises base wines from several seasons. The pinot noir and chardonnay grapes for Pelorus are harvested when the ideal balance between acid and sugar levels is reached for the production of premium sparkling wine. The naturally high acidity found in grapes grown in the Marlborough region ensures elegance and crispness in the final wine. Several different clones of chardonnay and pinot noir are used in the vinification of Pelorus NV. All grapes are pressed without crushing and the juice is given a short period of settling which is followed by racking and inoculation with a pure strain of Montrachet yeast. The base wines are fermented and aged in a mixture of stainless steel tanks, large oak vats and small French oak barrels. Following a spontaneous malolactic fermentation the wines are left to age on lees for a further eight months prior to blending each November. The chardonnay predominant blend is put on tirage using prise de mousse yeast the following February and subsequently allowed to attain a minimum of two years lees ageing in the bottle before disgorgement.
