A Champagne House is eventually judged on the quality of its Brut Non Vintage. It is in the making of such a wine that the true Art of Champagne blending reveals itself. This is an art in which the House of Veuve Clicquot excels. Our Brut Yellow Label reflects the superb vineyards we own and the consistent nature of our House style. The predominance of Pinot Noir provides the structure that is so typically Clicquot, while a touch of Pinot Meunier rounds out the blend. Chardonnay adds the elegance and finesse essential in a perfectly balanced wine. Grapes from as many as 50 to 60 different Crus go to the blending of Yellow Label. Traditionally, the proportion of each grape variety used is : 50 to 55% Pinot Noir - 15 to 20% Pinot Meunier - 28 to 33% Chardonnay. These figures vary slightly from year to year according to conditions. The Chef de Caves has to achieve the total consistency of taste, which makes Yellow Label so immediately recognisable, so utterly reliable both in terms of quality, colour and bouquet. He will draw on priceless Reserve wines for the blend: from 25 to 35%, sometimes as much as 40% to ensure the continuity of the House style. Each of these older wines - perhaps 9 years old - is kept separately to preserve the unique qualities of the vineyard and the vintage. First, Yellow Label looks beautiful: golden-yellow, with a foaming necklace of tiny bubbles. Next it is so pleasing to the nose: initially reminiscent of white fruits and raisins, then of vanilla and later of brioche. Note the fine balance between the fruity aromas coming from the grape varieties and the toasty aromas following the ageing in the bottle. The first sip delivers all the freshness and forcefulness so typical of Yellow Label with a symphony of fruit tastes following on. Here is a true member of the powerful Brut family, well structured, admirably vinous. The lingering aromas echo and re-echo, with each fruit or spice note distinct. Veuve Clicquot Yellow Label manages to reconcile two opposing factors - forcefulness and finesse - and to hold them in perfect balance. This consistent power to please makes it ideal as an aperitif, and perfect as the Champagne to enjoy with a meal.

It was, of course, called vin d'Ay as the Champagne appellation appeared in 1887. Today, out of 323 crus of the Champagne region, only 17 are classified as 'Grands Crus 100%'. Ay is one of them.

Bollinger only produces two different blends: that designed for the non-vintage Special Cuvée, and that which will become vintage Grande Ann?e. Following the harvest period, Bollinger's decisions on blending are not made before January. The blend for the Special Cuvée is an ideal version of the classic Champagne blend, using the different grapes of a given year from a variety of crus, with the addition of older, reserve wines. This blend necessarily incorporates subtle variations each year whilst remaining consistent to a style. It is, therefore, the hardest of all Bollinger to make. It contains the full expression of the Bollinger style and the House feels it should be judged on this - its benchmark wine. The denomination Special Cuvée was created in 1911. The idea came from William Folks, then partner of the illustrious London House of Mentzendorff. This great wine lover felt it was an insult to simply call this great wine 'non vintage'. The suggestion of naming it 'Special Cuvée' was immediately approved by Monsieur Bollinger. A blend par excellence, the Special Cuvée is the purest expression of the Bollinger style; of its craftsmanship and its singular conception of what a champagne should be. It is, therefore, on this wine that the House of Bollinger shows how it is different from other Champagne Houses, asserts its qualitative policy and by which it asks to be judged. Madame Bollinger - 'I drink it when I'm happy and when I'm sad. Sometimes I drink it when I'm alone. When I have company I consider it obligatory. I trifle with it if I'm not hungry and drink it when I am. Otherwise I never touch it - unless I'm thirsty.'

MOET & CHANDON - Vintage 1999 75cl Bottle
Twenty wines have been blended to convey the characteristics of the 1998 harvest, and to create this full-bodied and authentic wine. The generosity of this assemblage built on its delicacy and vivacity is revealed by its ageing in the cellar. The 1998 harvest is a vintage marked by early flowering. Early budding and a hot thundery spring permitted quick flowering, which was completed by the first fortnight of June. Despite very early average temperatures, the summer was remarkable for its sunshine and dryness until the beginning of the harvest (September 10th). The later start of the rains did nothing to affect the quality of the harvest. The wines are fine, clear and expressive. 30% Chardonnay, 50% Pinot Noir and 20% Pinot Meunier of a medium gold colour with hazlenut and coffee aromas, complimented by delicate lime and ripe wheat shades with a wonderful roundness and balance, built on delicacy and vivacity. The full bodied nature of this wine compliments chicken pates, scallops, fish dishes and creamed meats and caramelised fruit tart.
