TRIMBACH - Pinot Blanc 2003 75cl Bottle
The 2003 Vintage in Alsace was one of the warmest and earliest ever. The richness and power of the wines makes 2003 an attractive vintage to drink now. Winemaker Pierre Trimbach made the decision to harvest very early in order to maintain freshness and balance. The Harvest: Grapes are sourced from 150 growers in the region where Jean and Pierre Trimbach personally oversee selection at the harvest. Gentle pneumatic presses are employed for optimum quality juice and then both Pinot varieties are vinified separately to dryness. Separate vinification is crucial to the success of the final blend. The final wine has an alcohol content of around 12% Two Varieties are sourced for this wine and blended in equal proportions. Pinot Blanc known locally as Vrai Pinot contributes a greener colour and crisp acidity, the other variety Pinot Auxerrois from the Auxerre region adds a golden appearance with richer flavours to give a fuller style. Auxerrois is more predominant in the blends for producers in north of the region. Around Bergheim Pinot Blanc is more dominant in the blend. The best producers agree that blending produces the most successful results. This wine is golden in colour with a fruity, zesty, citrus nose, on the palate it is dry, medium bodied, showing apples and ripe citrus fruits with balancing acidity and an exceptionally smooth finish. This is a wine with instant appeal and approachability, a great introduction to the wines of Alsace. It goes well with white meats, seafood and pasta. A wine to be enjoyed with everything, except pomp.

CASA LAPOSTOLLE - Cabernet Sauvignon 2004 75cl Bottle
Vinification: Must was fermented 10 days between 28-30C, followed by 12-15 days post fermentation maceration. 80% of the wine was aged for 12 months in 2-3 year old French oak barrels and 20% for 13 months in new and one year old barrels. Bottled in October 2004. Tasting Notes: Intense red ruby colour. The nose is elegant and clean, showing complex aromas of spice (black and white pepper, nutmeg), red fruit and berries well integrated with hints of oak and finished with notes of caramel and vanilla. On the palate the wine shows very attractive tannins, good concentration of fruit and solid structure, with a long and lasting finish.

Very dry with a distinctive bready, yeast-like nose. Light, crisp and fresh with Granny Smith apple flavours. Ageing wines from Jerez takes place through the laborious, precise process known as the 'criaderas y solera' system. In this process, the younger wines are blended slowly and methodically with other more mature ones. The older wines impart their flavour to the younger ones, while the latter 'freshen' the former due to their youth and strength. The wine for bottling is only drawn from the lower tier of casks, called 'solera', as they lie on the ground; always a small percentage of the total content of each cask, never exceeding one third. The amount of wine drawn from the solera - or 'saca' - is then refilled with wine from the casks on the tier directly above (first 'criadera' (ageing level)); these are then refilled with wine drawn down from the tier above, (second 'criadera'), and so on up to the top where the supernatant wine is first poured in. This ritual is repeated year after year at the Gonzalez Byass ageing cellars. The wine slowly works its way down through the ageing flasks till it reaches the solera. All the firms oenological knowledge is concentrated in the latter. The fruit of more than one hundred and fifty harvests and the efforts of several generations. Only these casks will have the honour of giving the wines bottled with the Gonzalez Byass labels.

LOUIS LATOUR - Domaine de Valmoissine Pinot Noir 2004 75cl Bottle
A pale, mahogany coloured wine with bold, lively fruit aromas. Medium acidity, supple tannins and round structure all combine deliciously with floral flavours to create a suave, fine wine. Traditional Burgundy techniques with oak-ageing The Domaine de Valmoissine is located on the site of the ancient monastery and university of Valmoissine at 500 metres above sea-level which guarantees sunshine during the summer months whilst remaining cool and limits the possibility of spring frosts. The grapes are entirely hand-picked before being fermented in stainless steel open-vats for a short period of 3-4 days. Pigeage will take place 2-3 times a day to extract colour and tannins. The wine is then matured in old oak casks from Maison Louis Latour's cooperage in Beaune in which the wines flavours and aromas develop naturally, and harmonise with the mellow wood flavours of the oak. The style of this wine resembles Burgundy's classical 'Vin Vermeil' that the first Louis Latour was producing at the end of the 18th century. Elegance and finesse packed with fruit, and a vivid 'vermeil' or bright red colour. Bottled after 8 months of maturation, it can be drunk with pleasure only a year after having been made. The resurrection of this style of wine already has a dedicated following.

TOMASSO BUSSOLA - Valpolicella Classico BG 2004 75cl Bottle
This wine has a lovely, dark colour, a dense and glossy hue, although not inky or black. It doesn't prepare you for the nose, which is dense, powerful and impressive. Aromas of blackberries and chocolate fill the room, and closer examination reveals notes of black pepper and pickling spices. The palate is luscious and sweetly textured, from entry right through to the finish. Despite it's full body, ripe, spicy tannins, power and grip it has delightful balance. PIO CESARE - Moscato d´Asti 2004 75cl Bottle
Pio Cesare has harvested grapes for their Moscato from a few select vineyards in the village of Treiso and Madonna di Como for over a hundred years. The vintage date is carefully chosen in order to get the maximum ripening of these grapes, as evident a beautiful rusty gold colour. Harvest usually begins in the last week of Ocotber. Soft pressing followed by slow fermentation at a low temperature and bottling commences in March. The Moscato d´Asti is a sweet wine, rich in fruit scents, soft and alluring. It is a clear, bright glossy gold yellow colour with a ripe fruit and acacia flower bouquet. On the palate, the wine is soft and sweet, but with a definite strength.

Grapes are sourced from growers in the region where Jean and Pierre Trimbach personally advise and oversee on viticulture and selection. 100% Riesling by law sourced from amongst the 3,000 hectares in Alsace. Gentle pneumatic presses are employed for optimum quality juice that is then allowed to clarify naturally before fermentation in temperature controlled stainless steel. The wine is then allowed to age in bottle in the Trimbach cellars and is released later than other producers to produce a more developed, complex style. No wood aging is used at any stage this preserves the clarity and purity of the grape. This wine is pale golden in colour with a greenish tinge. On the nose it has developed aromas of minerals, and a slight petrol note. On the palate it is full, again slightly mineral with grapefruit and lemon-like fruit. This ripeness is balanced by good fresh acidity and great length. This wine is a classic introduction into Alsace Riesling where the aim is for a high alcohol, dry, powerful wine with enormous length and flavour. These characteristics make it an ideal accompaniment to Alsace style dishes such as Tarte d'Oignon, Choucroute and pork. It is also a great companion to fish whether grilled or marinated. It is ready to drink now but has potential to age for another five years.

CAPE MENTELLE - Semillon Sauvignon 2004 75cl Bottle
Heady aromas of passionfruit, orange blossom, ripe lemons and notes of tarragon mingle with a waft of vanilla derived from barrel fermentation. The palate is creamy and textural, with vibrant, flamboyant citrus flavours that finish crisp and clean, with great length and focus. Half of the grapes are sourced from estate vineyards and the other half from contract growers in the Margaret River region. Gravel laterite soils predominate in most of the best vineyards with some sandy loam soils in others. A range of canopy management strategies are employed, all with the objective of maximising sunlight into the fruiting zone. The most favoured technique is vertical shoot positioning with leaf removal which improves sunlight exposure, enhancing flavour development and providing a balanced leaf to fruit ratio for even ripening. Irrigation is used judiciously to maintain balanced vine growth and a steady rate of ripening. A cold but calm winter was followed by a pleasantly mild spring lacking the extremes occasionally endured in the south west. The growing season was dry from mid-November through to mid-April with only 80mm of rain falling during this period. The lack of rain was the most significant characteristic of the vintage and when combined with the mild temperatures it augured well for the grapes' development. Irrigation was a saviour this year and its judicious use allowed the vines to maintain sufficient health to ripen the fruit. Ripening was slow with most varieties harvested up to seven days later than normal. The rains held off throughout March and April to allow a problem free harvest. Harvest started a week later than last year, commencing on March 2nd with a batch of Sauvignon from the northern part of the Cape and finishing on March 25th with a batch of Semillon from the south. Fruit was sourced from 8 different vineyards with an average brix of 22.5 at harvest and reasonably good acidity reflecting the cooler conditions of the early part of vintage. The blend is 53% Sauvignon and 47% Semillon. Average yield for all batches was 9.5 tonnes/hectare Our minimal approach to vinification of this blend is geared to maximising fruit flavour with a distinctive regional nuance. Fruit is machine harvested at night to ensure that it arrives at the winery in cool condition. A small amount of SO2 and a pectolytic enzyme to aid in settling is added to the fruit before crushing/destemming and transfer through a must chiller to a tank press. The juice is gently expressed from the skins with a yield of only 650 litres/tonne, with the other 100 litres/tonne kept separate. The juice is racked off gross lees and fermented at 15 degrees Celsius in stainless steel tanks with 20% of the blend fermented in new French and American oak barrels and left on lees for ten weeks. All batches are simply bentonite fined and filtered before blending the batches judged to be the best. The wine was bottled in August 2004.

Pio´s Barbera is a wine quite different from many other Barbera. This is because the Barbera grapes are grown alongside the Nebbiolo grapes. This, combined with the extensive barrel ageing, results in a wine with the strength and wild energy of a Barbera, but the refined elegance of Barolo. Pio Cesare Barbera is a unique Barbera full and brave, yet soft and supple. Pio Cesare Barbera has an intense ruby colour with garnet reflections. The bouquet is distinguished and vital, with fresh, ripe fruit. The palate is clear and definite, with hints of ripe pulpy fruit, cherry, and notes of chocolate, frame with a long and pleasant finish. The grapes come from selected vineyards in the villages of Monforte and Castiglione Falletto and from grapes in Pio´s vineyards in the villages of Serralunga and Treiso. The fruit undergoes a careful selection to eliminate all imperfect grapes. The vintage takes place around mid-October, just a little before that of Nebbiolo grapes for Barolo and Barbaresco. Fermentation takes place for 10 to 12 days at a temperature of 24-25 degrees. Ageing occurs for two years in French oak casks of various sizes (25 to 55 hl) and in a small French oak barrels.
