SOUTHBANK ESTATE - Marlborough, Sauvignon Blanc 2004 75cl Bottle

Following fermentation the wine was given a light fining and is filtered prior to bottling. The wine was bottled soon after processing to retain its freshness and distinctive Marlborough Sauvignon Blanc character. CASA LAPOSTOLLE - Chardonnay 2005 75cl Bottle
Harvest: The frost came early in September resulting in very low yields in 2004. They averaged between 2 and 5 tons per hectare. The frost meant that vine growth in Casablanca was slower than in other areas. The very hot temperatures in Summer were moderated by the cooler nights. The Chardonnay grapes slowly reached their optimal ripeness, and were picked between the 5th and 19th of April. Fortunately the rains only came once the grapes had been picked. A very good year for Casablanca, with fresh fruit aromas and excellent acidity. Vinification: 13% of the must was barrel fermented and aged for 9 months in new oak (5%) and 1-2 years oak barrels (95%) with lees stirring twice a month. 87% went through fermentation and aging in vats. Temperature of fermentation was between 16 to 23C in the barrels and 16-17C in vats. Bottled from the 23rd of February until the 4th of March 2004. Tasting Notes: Colour: Bright yellow with beautiful greenish hints. Nose: Attractive and fresh, notes of exotic fruits and fresh citrus with well-integrated hints of oak on the finish. Mouth: Very good well integrated acidity with a full and round structure, together with a concentration that is present from the beginning. The finish has nice hints of oak showing an elegant toasted complexity. Long and pleasant finish.

CASA LAPOSTOLLE - Sauvignon Blanc 2005 75cl Bottle
Harvest: Hand-harvested from the 2nd to 22nd of April 2004. Vintage: The winter 2003 was dry in Chile with low level of rains that induced a budding 10 days earlier than usual. In Spring, temperatures were normal with just one rain at flowering time. Summer started with rather warm temperatures, average temperatures above 20C, and maxima reaching 32-34C. No rain was registered. The precocity of the year observed at the early stages of the growth slowly decreased in some situations, with only a few days differences at 'veraison'. Finally harvest took place between one and two weeks earlier than the previous vintage. Vinification: Must was fermented 15 days between 26-28C, followed by a 10-15 days post fermentation maceration. 55% of the blend was aged for 10 months in first, second and third years old French barrels. 45% of the blend was aged in stainless steel tanks. Bottled in October 2005. Tasting Notes: Intense red ruby colour. An expressive nose with elegant aromas of red fruits like ripe strawberries and currant. In mouth the 'attaque' is perfumed with red and black fruits, such as blackberries and cherries. In the medium palate this elegant wine is supported by a really good structure with fine and delicate tannins. The end of mouth is persistent and suggests coffee notes .

JACOBS CREEK - Reserve Shiraz 2004 75cl Bottle
Good winter rains ensured that soil profiles were well filled before the growing season. Cool spring temperatures experienced in premium grape growing regions promoted healthy vine growth with desirable bunch numbers. Warm and dry summer conditions provided ideal conditions for optimum colour and flavour development, while efficient ripening was encouraged by warm autumn temperatures. Reduced yields, low disease risk and desirable weather conditions ensured that premium Shiraz parcels showed the richness of colour and intensity of varietal flavour required for the Jacob?s Creek Reserve Shiraz. Bouquet. The wine shows concentrated juicy cherry and blackberry fruit, with fragrant spice and black pepper notes complemented by subtle toasty cedar oak. Palate. Intense blackberry, liquorice, and pudding spice with lively black pepper notes. Subtle smoky cedar oak flavours complement the silky mouth feel, providing a beautifully structured and pleasantly tactile wine. The 2003 Jacob?s Creek Reserve Shiraz owes its complexity to the integration of moderate to warm climate ripe blackberry lusciousness with stylish cool climate black pepper and spice characters. The enticing nature of the generous yet approachable fruit flavours ensure that the wine can be enjoyed by those who choose to drink it now; however it has sufficient depth of flavour and density of structure to evolve further over the next 10 years if cellared carefully.

KEO - Commandaria St John 75cl Bottle
The historical sweet desert wine. Harvested grapes are spread out in the sun to dry until their sugar density reaches 19-23 Baume. Once achieved, the grapes are crushed and fermented until the process stops naturally due to the high sugar content. The must is then aged in oak barrels for a minimum of two years. Similar to the solera system, the barrels are never completely emptied. New juice is added to the barrel containing old juice and the process begins again. St. John Commandaria is a sweet wine with a powerful bouquet filled with dried fruits, spices and oak. It is luscious and full-bodied.

JACOBS CREEK - Reserve Chardonnay 2004 75cl Bottle
A cool moist winter continued into Spring and was followed by fine weather during flowering. This resulted in higher than expected yields and a slightly late harvest. A warm dry Summer ensured disease free Chardonnay grapes, and fine weather during the harvest season allowed grapes to ripen under ideal conditions. These factors produced Chardonnay grapes with rich and fresh varietal flavours, particularly in the cooler regions of South Australia where this wine is sourced. Medium straw with deep vibrant green hues. Bouquet. Intense white peach & melon fruit with a background of nutty oak and buttery complexity. Palate. White peach, melon and citrus fruit flavours are quite fresh and long which marry well with the nutty, cedar oak flavours. The texture is soft and creamy and balanced by a fresh acid finish.

VERGELEGEN - Mill Race 2003 75cl Bottle
The Mill Race at Vergelegen was constructed during Governor Adriaan van der Stel's tenure on the estate to divert water from the Lourens River to the mill wheel. Sourced from north and north-westerly vineyards at Vergelegen, Somerset West. Dominating soil types are decomposed granite, Hutton and weathered shale. The grapes were harvested into 500kg bins and then de-stemmed and crushed. Fermentation took place at temperatures of 30c for the Cabernet Sauvignon and 26c - 28c for the Merlot and Cabernet Franc. The young wine was then macerated on the skins for a further three weeks. Pressing was very light and the wine was run into small 225 litre French oak barrels for Malolactic fermentation. The wine was matured for 18 months in wood, followed by an egg white fining and bottling. Drinking well now but will improve with further maturation for 4-6 years. Attractive dark ruby. The nose shows ripe berry, plum, chocolate and coffee flavours. There is also a hint of mint, spice and pencil shavings. The tannins are fine grained with great fruit-wood integration. Ideal with pasta, pizza, stews and premium red meat cuts.

VERGELEGEN - Sauvingon Blanc 2006 75cl Bottle
Pale green colour. The nose jumps out of the glass - gooseberries, fig, tinned peas, black truffle, elderflower, some ripe fruits, cut grass, green pepper. The wine is full, intensely flavoured and very long on after taste. Selected from both Vergelegen's own vineyards in Somerset West and selected vineyards on the West Coast near the town of Koekenaap, approximately 400 km from Vergelegen. The Vergelegen vineyards are located on south or south-west facing slopes. The grapes are picked when the desired flavours are showing at optimum. No skin contact is employed as we believe this technique leads to coarse wines. The juice is settled for 72 hours at low temperatures before inoculation with the desired yeast strain for Sauvignon grapes. To avoid conformity with other SA producers, we ferment at higher temperatures. This leads to fuller, bigger and more intensely-flavoured wines. All the corks were analysed for TCA and a standard of less than 2 ng/l was set as the acceptable level whereas the industry standard is 5ng/l. To avoid potential cork contamination entirely, 20% of the vintage was bottled using a Stelvin closure.
