Blended from a variety of different grapes grown on the estate, Château Haut-Beauséjour contains 52% Merlot, 40% Cabernet Sauvignon, 5% Petit Verdot and 3% Côt. After the assemblage, the wine is left to develop for 12 months in barrels made from oaks grown in central France, 30% of which are new. The wine rests for a further 12 months in the bottle before being finally marketed. Appearance: Lovely dense, deep red colour. Nose: Very fruit-forward, lush red fruits on the nose mixing with hints of spice and toastiness. On the palate: Lively on the palate with all the verve and structure that great St. Estèphe are known for. The tannins still have quite a rasp but they are surrounded by enough flesh and fat to sustain an impression of fullness. The wine shows harmoniously as it evolves, tinged with toasty notes of wood and ripe red fruit. All the class and refinement of a true St. Estèphe.

A relatively low yielding vintage, with a hot start bringing on an early harvest for the whites, followed by prolonged wet and cloudy conditions causing some initial concern for the reds. This is a wine of great intensity with fruit and oak both gloriously magnified. On the nose, the vibrant lemon and fuzzy peach aromas are underpinned by vanillin and nutty oak characters. The creamy, mealy notes of the natural yeast add interest and complexity. The palate is rich and creamy with cleansing acidity, a penetrating finish and flavours that hang around longer than a busker on a street corner! The fruit for this wine is sourced from three sites, with most coming from the McHenry Vineyard, which has a sheltered north-easterly aspect and deep gravel loam soils sloping down to the Margaret River. This low-yielding vineyard provides quality fruit that forms the backbone of the blend. Our Chapman Brook vineyard planted in 1993-4, is located about 20km south-east of Margaret River and is now a major contributor with its crisp, clean citrus flavoured fruit. The chardonnay grows on a north facing slope with well-drained grey gravel loam soils. The sandy loam soils of the Maiolo Vineyard, further north in the region, produce fruit contributing to the ripe, full-bodied characters of the wine. All vineyards are spur pruned and vertical shoot positioned to enhance sunlight exposure. A mild winter led to early budburst - but wintery, wet and windy conditions followed in spring. By November, the weather had warmed up and vineyard irrigation was required by late December. Vintage started early, due to the lower than average yields, caused in turn by the cold spring of 2002 affecting bud fruitfulness. Mild conditions prevailed until early March when it became very hot. All the whites were harvested by mid-March, when rain fell, providing some relief from the heat, and cool, cloudy but dry conditions lingered on, allowing us to get the rest of the reds in before another larger front passed over. Most of our reds were ripe and ready to harvest in the first week of April, and we were able to get everything harvested before the deluge. The Chapman vineyard was harvested from February 28th to March 4th and the McHenry ripened very quickly due to hot conditions and was picked on March 10th - a very hot day. Ripeness varied between 23 and 25.5 brix while the acidities ranged between 6.6 to 8.8 gram/litres. Yields from the Chapman and McHenry vineyards were a moderate 5.5 and 6.9 tonne/hectare. This year the blend was 41% from McHenry, 55% from Chapman and 4% from the Maiolo vineyard. The machine-harvested Maiolo fruit was crushed, must-chilled and pressed to stainless steel tanks for cold settling prior to racking off gross lees to another tank for inoculation with prise de mousse yeast, which produces clean, fruit driven wines. Two - three days later the fermenting juice was racked to barrels, 46% of which were new and the remainder one and two years old. The McHenry and half the Chapman fruit was elevated as whole bunches into our tank press where the juice was gently pressed into a holding tank. The juice was racked straight into barrel the following day for fermentation by indigenous yeast. Malolactic fermentation was encouraged in 10% of the blend, the balance was sulphured in winter. Occasional stirring and regular topping is carried out during the time in barrel. In December the contents of all barrels meeting our standards were blended and given a light bentonite fining before filtering and bottling in February 2004.

This deep opaque plum colour wine has a fruity bouquet with hints of cassis and plum. It is full on the palate with fine tannins and an excellent balance. Meerlust Merlot will age very well for up to 12 years. Enjoyable with all fine food. Tasting notes: Very intense, almost purple black in colour, very lively & bright. Typically Merlot on the nose with juicy plum & mulberry fruit, followed by a pronounced spicyness, cloves & liquorice bouquet. The Merlot is full bodied with mouth filling juicy fruit opulence, creamy richness and very soft, textured tannins. There is a core of richness & structure which will open up as the wine matures. Soil type: Decomposed granite mixed with clay Vinification: Fermentation in open steel tanks for 7 days. After pressing, the wine was settled and underwent malo-lactic fermentation in the tanks. It was then matured in 300 litre Nevers oak casks for 18 months and for 2 years in the bottle before release.

This wine is made from fruit grown on the historic 150-year-old Turkey Flat vineyard. The Cabernet Sauvignon is planted on the river flat near the cellar door where tobacco once grew during World War I. Although the tobacco did not thrive, the Cabernet Sauvignon vines produce fruit of exceptional richness and concentration. What sets Cabernet Sauvignon apart is its ability to travel, to set down its roots in distant lands and still produce something that is recognizably Cabernet, whatever the circumstances and conditions. Whilst the Barossa Valley has largely earned its reputation for making 'big' reds with the Shiraz grape variety, this wine is certainly proof that the Barossa can produce Cabernet with power and concentration. The Turkey Flat Vineyard boasts some of the oldest Shiraz vines in the world. Planted in 1847, these hard-working gnarled old vines are still producing fantastic grapes. They are dry grown with their roots extending metres into the soil in search of moisture. Much of the credit for the best Shiraz made in the Barossa is due to old vines such as these. The fact that these vines still exist is largely due to a far-sighted quarantine scheme, in which South Australia was spared the phylloxera outbreak which devastated the vineyards of Europe, America and subsequently parts of Australia in the late 1800's. The warm 2003 vintage, compared to 2002, produced full flavoured concentrated wines. Each small parcel of Shiraz was vinified separately and matured in French oak barrels. The result is a firmly structured complex Shiraz, with lifted 'primary' fruit aromas of bitter cherries and prunes and 'secondary aromas' of Christmas cake/plum pudding, mocha, and leather/suede. The full-bodied palate has flavours of plums, red fruits, spice, and will definitely improve with careful cellaring of up to 10 years.

100% Grenache. 13 grape varieties are recognized for Chateauneuf du Pape. Chapoutier's is made with a single grape variety, which is one of its particularities. The terroirs is a quaternary terrace, with a surface of rolled stones coming from the former bed of the Rhone. The grapes are carefully selected during the harvest; this selection is compulsory for the wine to be given the Appellation. Vinifaction in vats made of concrete covered with epoxy resin, because grenache is very sensitive to oxidation. The grapes are 100% destemmed before being placed in vats. Fermentation lasts from 15 days to 3 weeks at a temperature which does not exceed 32?C. Matured in oak barrels and vats for 12 to 15 months. Colour : Deep purple. Nose : Complex and subtle, blackcurrant, plum, followed by roasted coffee, cinnamon, cherry, morello cherry and liquorice. Bouquet : Spicy aromas developing into animal scents. Matching foods include tuna fish carpaccio. All meats, marinated or in sauces. Large game and all cheeses.

Deep and dark colour. Very complex nose of mature fruits with a touch of wood. Fat attack, beautiful tannic structure and long aftertaste. The beautiful old 18th-century building (formally the stables and cowshed) was renovated in 1993 and is now used to age the wine in barrel. The technical installations were entirely renovated starting in 1990. Since then, fermentation has been carried out in 18 temperature-controlled, stainless-steel vats all equipped with a temperature control system. The final blending is made about two months after the harvest. The whole winemaking process is very traditional. After fermentation, once vats have been selected for blending, the wine is aged in oak barrels for 15 months. During that period, the wine is racked 3-4 times. The aim of this process is to separate the wine from its lees. This is carried out from barrel to barrel, and the clarity is checked by stopping the flow, filling a glass of wine and holding it up to a candle. Once it starts to look cloudy, the racking stops. The wines of Château Les Ormes de Pez are powerful and well-balanced. They are typical of the appellation: rich, round and quite tannic.

Another near perfect vintage. Taking on the mantle of maturity, a bouquet of violets and brambley fruit complexed with brandy snaps, vanilla and tobacco. The wine evolves over time to an array of aromas that let your imagination run wild. Dense and luscious palate, which is offering immediate appeal now but will continue to develop beautifully for years to come. The fruit sourced for this wine comes from our oldest vines planted on the estate between 1970-72. The vineyard is located 8 kilometres from the ocean, with an elevation of 80 metres and a south-west aspect. The vines grow on gravel laterite soils derived from decomposed ironstone over gravelly, clay sub - soils. Vine spacing is 2200 vines/hectare with all vines vertically trained with judicious shoot and leaf removal carried out during late summer to open the canopy to sunlight. All vines are cane pruned with between 30 and 40 buds left on each vine. Trickle irrigation is installed and used sparingly, combined with a springtime composting to maintain vine health and ensure that physiologically ripe grapes are harvested. A mild yet wet winter with fairly consistent rains continuing till the end of October and cool to mild temperatures continuing to November ensured a relatively late budburst and flowering. By early summer, with the continuation of some mild to very warm temperatures and an end to the rain, the vines got a kick along. Ideal ripening conditions prevailed for the rest of the season due to optimal photosynthesis conditions. Weather was characterised by a lack of excessive heat and mild night time temperatures ensuring the vineyards provided fully ripe and flavoursome fruit. A little scare in early March by cyclone Steve produced only 7 mm of rain and provided brief respite during a rather hectic harvest schedule. Fine and mild weather continued until the last grapes were harvested by 12th April. Another excellent Marri blossom during February and March provided plenty of nectar for the silvereyes, which diminished their hunger for grapes. Two batches of Cabernet were harvested from the estate block on the 29th March and the 5th April. The sugar levels between the batches ranged from 25.0 to 26.1 brix and acidities between 6.2g/L, pH3.62 and 7.1g/L, pH 3.52. Average yield from the old vines was a moderate 7.6 tonne / hectare. A small amount (7%) of Cabernet franc from our Trinders vineyard harvested 20th March was used to lift the aromatics, harvested at 26 brix 5.5 g/L and ph 3.68. Fruit arriving at the winery is checked before it is de-stemmed and lightly crushed so that high proportions of whole berries are conveyed to the fermenter. The must was left to macerate for a day before seeding with neutral strain of yeast. Early vigorous extraction is followed by a gentler pump over regime as the ferment proceeds. Cabernet stays on skins for up to 28 days depending on the health and ripeness of the skins. Once dry, the wine is inoculated for malo-lactic fermentation. Then racked twice before going into barrels of which 75% of the barrels are new in late May. The oak for the barrels originates exclusively from the forests of Nevers, Allier and Troncais and coopered in France. The wine underwent periodic barrel to barrel rackings and regular toppings with a final assemblage done in spring of '00. The early blending allows time for a harmonious marriage of the components to occur. After 18 months in barrel the wine was blended together and coarsely filtered into bottle, mid December 2001.

This wine is elegant and appealing. Concentrated and generous it is well-balanced, spicy with oak nuances and a good tannic structure. This wine was awarded a silver medal at the Concours des Vins de France in Macon in Spring 2002. To be enjoyed with red grilled meat or in sauce, game and French cheeses. Appellation area 'Les Feves'. Mid-slope facing East among the highest vineyards of Beaune and always considered as the ultimate Premier Cru. This appellation (4.25 ha) is a Chanson Monopole.

Pale straw green in colour and vibrantly aromatic, the 2005 Cloudy Bay Sauvignon Blanc is like an exotic infusion of fresh ginger, sweet basil, and lemongrass layered over ripe tropical and citrus fruits. With great purity of fruit flavours, the palate is mouth-wateringly juicy yet finishes with a refreshing crispness. Grapes were sourced from estate and grower vineyards located in the Rapaura, Fairhall, Renwick and Brancott sub-regions of the Wairau Valley. Free draining, stony soils typify the Rapaura and Renwick areas whilst Fairhall and Brancott are predominantly aged alluvial loams containing some clay. The majority of fruit was grown on a vertical shoot positioned (VSP) trellis, and the balance on the divided Scott Henry trellis system. In 2005 sauvignon blanc yields averaged 10.0 Tonne/hectare (4.0 Tonne/acre). The season started well and early spring conditions were settled with a couple of chilly mornings, but thankfully, no frost damage. The weather during December and early January was unseasonably cold and cloudy with consistent, intermittent rainfall. This led to variable flowering and resulted in tonnages on the low side of average. The weather improved considerably during early January and for the rest of the summer fine conditions prevailed. By the time harvest commenced the season had 'clocked up' enough sun to catch-up with the long term average of heat summation levels. Harvest commenced under sunny skies but an unwelcome cold spell produced a couple of inches of rain and delayed picking over Easter. A dry April allowed the rest of harvest to be completed at a very measured pace. The light crop loads meant all vineyards were able to ripen in the cool Marlborough autumn. When a record frost occurred over most of the valley on the 25th of April the majority of Cloudy Bay's vineyards had been harvested. The Sauvignon Blanc harvest began on the 13th April under settled conditions, the first fruit coming from the stonier, warmer blocks around the winery. Harvesting continued steadily during the month through the progressively later ripening sites, finishing abruptly on the 29th of April after a significant frost that affected most of the Wairau Valley. All vineyards were picked at optimum ripeness with great concentration of fruit aromatics. The fruit was machine harvested during the cooler night and early morning temperatures and transported directly to the winery. The grapes were de-stemmed and transferred straight to tank presses. Free run and lightly pressed juice was cold settled for 48 hours then racked and inoculated with a neutral yeast strain. The fermentations were carried out in stainless steel tanks; after fermentation the wine remained in contact with yeast lees for about two months, prior to blending in July and subsequent bottling in August. Final wine analysis shows an alcohol of 13.6%, pH of 3.25 and titratable acidity 7.6 g/L.
