BRIOTTET - Creme de Figue (Fig) 70cl Bottle
Known for over 5000 years, eaten and used in the pharmacopoeia in the Middle East from where it originated, the highly energizing, digestive and laxative fig is grown throughout the Mediterranean basin. The Egyptians used figs for wine-making, the Gauls from Southern France used them to sweeten their dishes. Serve our Creme de Figue as in Malta, with delicious nougat, or try this recipe for fig salad: Serves 6: Peel 750 g figs and cut into pieces. Place in a large bowl and sprinkle with 3 soup spoonfuls of caster sugar. Add 1 dl Creme de Figues and 1/2 dl Curaaao Triple Sec. Cover with aluminium foil and allow to macerate in a cool place for at least 2 hours.

BRIOTTET - Creme de Melon 70cl Bottle
It was from Egypt, where it was already cultivated five centuries BC, that the melon set off for a long journey through Asia, via Persia and India. The 'Cantaloup' melon, cultivated by Roman monks, was introduced into France, in c.1495, by an expedition of Charles VIII on returning from the Wars of Italy. What a good idea! To begin with the melon was acclimated in the Comtat Venaissin and brought renown to the city of Cavaillon where Briottet's melons are produced. They are macerated to obtain a pleasant sweet, fruity and typical liqueur. It can be served as an aperitif or with desserts, alone or accompanied by champagne or white wine. Served chilled, it is excellent with sorbets, soups or fruit salads. You can also serve it in this cocktail: 3 cl liqueur de melons -1.5 cl vodka - 1.5 cl curacao triple sec - Fizzy water. To be drunk iced.

Briottet believe first of all, it is important to make a careful fruit selection. The varieties ' Noir de Bourgogne ' and ' Royal de Naples ', give a smooth texture and are undoubtedly the most suitable. The well-exposed vineyards are recommended for the fruit growing. When the blackcurrants are picked, they are handled with great care so as not to damage them and rapidly sent to the winery. The fruit is gently crushed to allow the alcohol to penetrate quicker right into the heart of the fruit. It is then stored in tanks with a highly neutral alcohol, strong enough to fix aromas, colouring agents, etc, and prevent fermentation, but weak enough to avoid burning the fruit and causing a too rapid precipitation of the pectine. After 45 to 75 days during which a certain number of operations are carried out in order to make the maceration as homogeneous as possible, an alcoholic juice is drawn off which we call infusion. Cremes de cassis with an abv between 15 and 20% are manufactured by the direct dissolution of sugar in a variable percentage of infusion. This operation is carried out in a mixing machine set to avoid any emulsion or oxidation. The name ' Creme de Cassis ' is reserved for blackcurrant liqueurs having a minimum alcohol of 15% and containing at least 400 grams of sugar per litre. Some cremes de cassis are made with 550 grams per litre. The wording ' Creme de Cassis de Dijon 'is restricted to those produced within the commune of Dijon.
